ICE CREAM CAKE : HAPPY BDAY AUNI ! (MY 2ND DAUGHTER)



Happy bday to you, Auni. Luv u so much. This time, I've try making ice cream cake for the first time in my life. Heheheheh.

I'm using choc sponge cake + nutty ice cream + whipping cream as the icing + pooh from bc. Ice cream cake have to be frozen always. If you want to eat it, you have to take it out and wait for about 15 ~ 20 minutes. For the next ice cream cake, i will put more ice cream into it. It's take about 1 boxes of ice cream just for this 7" cake. So, for all ice cream cake lovers, you can try this cake with your favourite flavor. You will love it just like me & my daughters loving it.

ITALIAN MERINGUE BUTTERCREAM (IMBC) YOCHANA


This is my favourite buttercream. It's not too sweet & it's quite firm to do decorations. Thanx to Aunty Yochana for the recipe. I use this recipe because I can't get any krimwell here, so I use butter & margerine. You also can use 60% (margerine) /40% (butter) for flower decorations. My friends loving it. Italian Meringue Buttercream Yochana

Ingredients :
200 gm. Sugar
60 gm. water
140 gm. egg white (><4eggs)>300 gm. butter (use voi)
300 gm. Margarine - buy the chilled block margarine (Marianne or Kake) - (I use sunnuntai margerine silver pack/shortening)


Method:

(1) Boil sugar and water till thick but flowy. (use candy termometer : untill 118c)

(2) Whisk egg white till fluffy (medium peak), then pour in the hot syrup (don't touch the whisk).

(3) Continue whisking the egg white till cool. (make sure it's cool !)

(4) Slowly add in the chilled butter and margarine and let it beat till thick and fluffy.

Note :
1& 2 : use whisker
3& 4 : use 'K' beater
When you use colouring, if it's not blended well you have to put little icing sugar in it & blend well.

Versi Melayu / Malay Version

Cara2nya:
1) 'Whisk' putih telur sampai medium gebu..(lebih kurangla)

2) Sambil tu masak sugar dgn air sampai 118c

3) Tuang air gula panas tadi tu terus kedalam mixer yg masih bergerak tu. Hati2 jgn sampai terpercik kat muka.

4) Mixer tu teruskan 'whisking' sampai adunan tu sejuk dr td.

5) Tukar dari whisker ke 'K' beater supaya senang pukul nnti.

6) Kmdn, baru letak butter dan marjerin yg sejuk & yg dh potong kecil2 sedikit demi sedikit ke dalam mixer.

STEP BY STEP : FROZEN BUTTERCREAM TRANSFER (FBCT)

My friend, Mahani ask me to do step by step tutorial on how to do cartoon picture using frozen butter cream method. So, here it is...

1. I just trace the picture on my baking paper/wax paper.

2. You can do outline using black icing or with a melt chocolate.

3. Frozen the outline for 20 minutes or until it's hard. Don't put any cover on top of it.

4. After that, you can colour your picture using colours buttercream.

5. Make sure, it's all cover especially near the outline & smooth it a bit. If not, there will be bubbles.

6. Cover the buttercream with another baking paper & frozen it for 30 minutes or more.

7. When it's already hard, you can peel off the baking paper & put it on top of your cake. Be careful.

8. Sometimes, you also can do it with a background that have same colour with the cake. It's up to you.

TYPES OF BUTTERCREAM ICING & FROSTING

1. Meringue Based Buttercream

Italian Buttercream: A cooked meringue made with a hot sugar syrup. ( Usually I use this type of bc because it's not too sweet & it's can hold any design)

• Swiss Meringue: A meringue made from whites and sugar warmed together over a bain marie. This dissolves the sugar.

2. Yolk Based Buttercream

• Pâte á bombe: Sometimes referred to as a French buttercream. A buttercream here is made with yolks and hot sugar syrup.

3. Butter Based Buttercream

Here you will find basic recipes ranging from only butter and powdered sugar to the incorporation of other ingredients such as cream cheese, melted chocolate, cream or non-fat milk powder. Sometimes shortening or an emulsified shortening is added for stability. (I'm not really fond of this bc because it's too sugary..)

4. Shortening Base Buttercream

Sometimes referred to as Decorator's Icing or Decorator's Buttercream. While this buttercream can be used for icing a cake, it is used mainly for decorations like roses and for piping borders and edging. Shortening has a much higher melting point making it suitable for those decorations needing a firmer look or handling. Since shortening does have a higher melting point, it will not have the same mouth feel as the above buttercreams, and can be very waxy to eat. If used for icing rather than strictly for decorating, butter and/or a liquid will be added for better mouth feel and flavour.

Jasmi just want a choc cake without any picture or writing for his friend party. So, I try to do decoration with a choc for the first time & it turn out well. But my hand is very sensitive with the choc...everytime i touch choc, it's starting to melt...hmmm.

BATMAN CAKE : 3rd ORDER

Ok sedap...budak2 nih suka je. Jures pun kata sedap sebab tak manis sangat. Biskut roll tu tak lemau, icing pun tak manis sangat..just nice





Yesterday, I've got a Batman Cake order from Adreana for her both children, Adam & Lisa. Immediately, I've search a picture of batman in the internet. If the picture is printed, maybe it can be more beautiful but nevermind, for me it's still ok & can be improve next time. Hopefully Adreana & family will like it. LAST MALAY WOMAN CAKE




It's choc moist cake , no filling, frozen bc transfer & choc ganache as a topping. This cake just for my children sake..I copy the pic from children malay books, "Bacalah Sayang" & that's why i named the cake as a Last Malay Woman Cake. ...heheheh
